Hi, I’m Ashley. Welcome to Sprout for Joy, where I share my love for healthy, plant-based recipes… along with a sprinkling of posts related to running and personal growth.
Why plant-based? I don’t claim to be strictly anything, but choosing to eat plants over animals has come naturally as I’ve sought to center, balance, and simplify my life. I think a plant-based diet allows my body more freedom to use food for its intended purpose – to nourish, replenish, and heal – rather than waste valuable energy processing foods that promote inflammation and illness. It’s a matter of simplicity and efficiency; it just makes sense to me. Ok, and I love vegetables.
Why Sprout for Joy? There was a time not too long ago when I didn’t take care of myself the way I do now. I chose to make changes in my lifestyle and mindset to get to a better place, and thankfully here I am. The decision to take charge and care of myself, while a struggle at times, has brought a peace like I’ve never known, and every day I know I’m on the right path. I feel like a little sprout, a new growth that has been planted in fertile soil and needs all the love and nourishment I can give it. Through healthy living and self-expression I plan to keep thriving in my new environment.
